Heading south this morning, we discover an unspoilt, rolling green landscape so impressive it has been named a European Destination of Excellence. In fact, some of Ireland’s best dairy produce comes from this region – sampling the local cheese is a must. Arriving in Bantry, settle in this evening and enjoy the beautiful and quaint town.

Head further south along the Haven Coast to Kinsale, a foodie haven at the end of the Wild Atlantic Way. First, we visit a local dairy farm that has been making cheese since 1979 for a private tour. Today, nearly 45 years on, the cheese range continues to be made by hand, using the traditional techniques and skills that have been passed from mother to daughter. Check in to your hotel and enjoy some free time to wander. A sunset stroll along a waterside walkway is a perfect end to your day’s touring.

Leaving Kinsale this morning, travel along the Copper Coast. The Copper Coast is now a UNESCO Global Geopark. It extends along the County Waterford coastline for 25km and is named after the 19th-century copper mines that lie at the heart of this spectacular stretch of cliffs. Oceans, volcanoes, deserts and ice sheets all combined to create the rocks, which provide the physical foundation of the natural and cultural landscapes here. Afterwards, it’s time to check into the peaceful Faithlegg Estate, a perfect spot for relaxation.
